This luxurious property in the heart of Hāna has debuted a new dining experience, offering guests another dinner destination and kamaʻāina a late-night watering hole. Paniolo Bar serves island-inspired dishes and drinks Wednesday through Saturday beginning at 5 p.m. and ending at 10, the latest closing time for any eatery in East Maui. Sip on Hawaiian-style renditions of classic cocktails, such as the Kiawe Ember, an elevated old-fashioned infused with housemade banana syrup and enveloped in kiawe smoke inside a glass cloche, or original creations like the refreshing Kīpahulu Rain, featuring two varieties of sake, elderflower liqueur and fresh basil. The menu goes beyond bar bites with hearty plates like guava- and shoyu-glazed pipikaula; ʻulu flatbread topped with mushrooms, goat cheese and truffle-herb oil; lamb shack on a bed of mashed Molokaʻi sweet potatoes; and sugar-dusted malasadas for dessert.
